International Croquette Day

Let’s celebrate International Croquette Day together! Because, honestly, who doesn’t love this delicious, creamy and crunchy snack, such a part of our tradition? If you’re not a fan of croquettes, cast the first stone, but you’re probably missing out on a mouth-watering culinary experience.

On this special day, we would like to share with you a recipe that, although we do not claim to be the best, we do believe it is very close to perfection. And best of all, we are sharing it with you,  no secrets, no tricks! All you need is a little bit of sleight of hand in the kitchen and you’ll be enjoying croquettes as delicious as Juan Carlos Ferrando’s.

Croquettes recipe:

Ingredients:

• 1 litre of milk
• 100 g Iberian ham
• 80 g butter
• 70 g flour
• Egg and breadcrumbs

Instructions:

1. In a stainless steel pot, place the butter and bring to a gentle simmer.
2. Stir in the flour and cook over low heat. Gradually add the (previously boiled) milk over medium heat, stirring constantly.
3. After approximately 50 minutes, add the diced Iberian ham and cook for a further 20 minutes.
4. Once the béchamel sauce is ready, let it cool in the refrigerator for at least 12 hours.
5. Using your hands, form small balls with the béchamel sauce and roll them in egg and then in breadcrumbs, coating them only once.
6. Let the croquettes rest for at least 30 minutes after breading.
7. Fry them in a very hot fryer at 190ºC. Make sure they are golden brown and have the perfect texture of béchamel sauce inside.
8. Serve and get ready to enjoy an explosion of flavour.
